Prawn Toast

125g peeled prawns (raw or cooked)
25g lard
3 tsps cornflour
1 egg white, lightly beaten
2 thin slices of white bread, crusts removed
75g sesame seeds
Finely chopped spring onion or chilli (optional)
Oil for frying

Chop the prawns and lard finely and add to the cornflour, season and add chilli or onion if using.
Mix with the egg white, then spread the paste onto your bread slices.

Cover the prawn side of the bread with sesame seeds, and press down.
Chill for 15 mins to help it all hold together when cooking.

Shallow fry in the oil until the bread is crisp and the prawns are cooked, about 6 mins.
