Easy as pie??
Suddenly I see where this phrase may come from…
I confess I bought the puff pastry.
This is a kind of recipe…I cant give exact amounts..It’s made from leftovers and a bit extra, enough to fill a pie dish.
I peeled and chopped 6 baby onions into wedges, but a large one will do
3 carrots peeled and chopped
2 apples peeled and chopped
A glass of wine
A handful of thyme….
Next time I make a roast I shall just make sure there is some leftover veg to throw in 🙂
I gently fried the veg in a splash of oil and a knob of butter…added salt and pepper and a glass of wine…a quick simmer then added the Thyme.
It all went into a pie dish with some leftover shredded pork and the cider jelly that was left on the plate.
A good stir and a pastry hat…a quick brush with egg..And half an hour in the oven…
We just added a jug of gravy…a bowl of stuffing and a huge dish of chips…..easy as pie….and delicious..
